RDB Burger by Romeo Dibona
(Makes 1 burger)

1 brioche roll
1 lb ground beef, 80% chuck / 20% brisket
½ cup shredded lettuce
½ cup avocado, sliced
1 slice thin red onion
2 slices thin tomato
5 bread and butter pickles
4 oz chipotle mayonnaise (see ingredients below)
1 package goat cheese
For the chipotle mayonnaise:
2 oz chipotle adobo
4 sprigs cilantro, finely chopped
2 oz lemon juice
2 cloves garlic
3 oz mayonnaise
1.) For the chipotle mayonnaise: Add all ingredients in a food process until smooth.
2.) Slice tomato, onion, avocado, and lettuce. Set aside.
3.) Form burger and refrigerate. Start your grill and get it smoking hot. Sear the meat, and once seared, start to slow cook the meat.
4.) Place the meat on the bottom half of your toasted brioche roll. Top with pickles, tomato, onion, avocado, and lettuce. Drizzle on desired amount of chipotle mayo, then top with desired amount of sprinkled goat cheese.
5.) Serve and enjoy!
