But, few know his best kept secret… that a well-organized pantry is the backbone of any kitchen. For the first time, Zakarian is showing us how to use the pantry to jumpstart any meal with his new cookbook, “My Perfect Pantry: 150 Easy Recipes from 50 Essential Ingredients.”

Borgata: In your opinion, which pantry item gives you the most bang for your buck?

Geoffrey Zakarian:Sea Salt and really good Sherry Wine Vinegar.

B: Why was this book important for you to write?

GZ: I am very passionate about the pantry. It is the chassis to build the kitchen properly.

B: What can we expect to learn during your Culinary Demonstration on Saturday, November 8^th?

GZ: Well, I always try to demystify, so I will continue to try to get everyone to adopt proper techniques and not repeat the mistakes that I see all the time.

B: Name two songs (artist/title) that get your creative juices flowing in the kitchen.

GZ: “Fly Me to the Moon” by Frank Sinatra and anything by Count Basie.

Old Homestead Ferrari-Carano Wine Dinner October 10 in the Borgata Culinary Series

Sit back a moment and let us at the Borgata Blog tell you a couple of love stories. Not your conventional boy-meets-girl love stories—though there is some of that—but the stories of how great restaurants and great vineyards are born.

We start with Don and Rhonda Carano, two restaurateurs who went looking for some fine California wines to serve in their Reno restaurant. As so many before them, they not only fell in love with the wine, they fell in love with California’s wine country—specifically the Sonoma Valley.

So in 1981, they became not only restaurateurs, but vintners as well, buying an initial 60-acres and founding the Ferrari-Carano Vineyards and Winery in the Alexander Valley. In 1987, when they released their first wines, they started their run as one of Sonoma’s principal winemakers; famed for their wide selection of wines and their picturesque vineyards.

Now here’s an even older story. It’s the story of the Sherry family and their long love affair with the Old Homestead Steakhouse, which dates back to Manhattan’s beef packing district in 1868. The Sherry family acquired the restaurant in the 1940s, when Harry Sherry, who started out there as a dishwasher, bought it and made the place a family business. Now that’s loving your job.

Present day operators Greg and Marc Sherry—who quite literally grew up in their family’s restaurant—brought the Old Homestead tradition to Borgata Hotel Casino & Spa in 2003, and have continued their long history of excellence and serving the finest cuts of beef in the world (including their specialty Kobe beef).

After hearing those two stories, there’s only one thing to say—“We gotta get these kids together.”

Well, we have. On Friday, October 10, Borgata presents the Old Homestead Ferrari-Carano Wine Dinner as part of the Borgata Culinary Series. The event features the pairing of Old Homestead’s amazing entrees with the best of Sonoma grape from Ferrari-Carano.

And it has led to a world-class menu from a starter of seared scallops paired with Fume-Blanc to house-made Ricotta Pie and Nutella paired with Black Muskrat Eldorado Noir with some amazing entrée selections in between.

Love steak? Love Wine? Love when they come together perfectly?

Great Deals Tuesdays in October at Borgata

Ah Tuesday. It’s the third day of the week and the second day of the work week.

But that’s not why it’s called Tuesday. The name actually comes from a Viking god of war named Tiw, so it’s Tiw’s day. Kind of like Thursday is named after Thor and so on.

In Latin the name was associated with the Roman god Mars, so that’s why in Spanish its Martes. Because Spanish is a Latin-based language.

More than you wanted to know?

Well, we just mention it because Tuesday has another meeting this October at Borgata Hotel Casino & Spa. In simple terms it’s just the greatest weekday ever to win big and party with us here in Atlantic City.

Savor Borgata Weekend: November 7-8, 2014

For the third year, Borgata will present a program of signature events throughout Savor Borgata Weekend that will celebrate the individual talent of each participating chef. On Friday, November 7, Savor Borgata will kick-off with two signature dinners designed to excite even the most experienced palettes. “A Night with Borgata’s Culinary Masters,” located at 28 West, will present a gastronomic experience guests will savor for a lifetime – including a cocktail reception with Iron Chef Geoffrey Zakarian and a 4-course dinner prepared by Bobby Flay, Michael Schulson, Stephen Kalt, and Thaddeus DuBois. Across property, restaurateurs Greg and Marc Sherry will enjoy more than a century of Old Homestead Steak House traditions by hosting a multi-course “Johnnie Walker Scotch Dinner” with their award-winning Executive Chef, Romeo DiBona. On the same evening, adventurous foodies will challenge their taste buds during “Extreme Eats” at The Water Club, indulging in delicacies like Alligator Bang Bang and Chinese Style Braised Duck Tongue while sipping on a selection of spirits, wine, and beer.

On Saturday, November 8, Food Network fans will learn some of Geoffrey Zakarian’s most celebrated recipes during a live Culinary Demonstration at Borgata’s Music Box theatre. Immediately following, Chef Zakarian will sign copies of his new cookbook, “My Perfect Pantry,” inside 28 West.

Also on Saturday, Borgata will host a series of intimate classes and engaging culinary activities, starting with a “Lunch & Learn” at Wolfgang Puck American Grille hosted by Executive Chef Aram Mardigian. Down the hall, Borgata’s Executive Pastry Chef – and former White House Pastry Chef – Thaddeus DuBois, will celebrate his sweet tooth at “Dessert-In-A-Jar,” while Fornelletto’s Chef/Partner, Stephen Kalt, shares his expertise on the quintessential Italian dish during “Holy Ravioli,” and Izakaya’s Chef/Partner, Michael Schulson, demonstrates just how fun and easy sushi-making can be at “Sushi & Sake with Schulson.” Later that afternoon, guests may join Absolut Vodka and Borgata Culinary to learn how to throw an unforgettable cocktail party at “Absolut-ly Fabulous Tapas Party” held inside one of the hotel’s premiere Residence Suites.

Borgata will also present tasting events for guests to pick their poison amidst bourbon, tequila, beer, and wine seminars across property on Saturday. Bourbon connoisseurs can begin their afternoon with Makers Mark Kentucky Straight Bourbon at Long Bar for “Bourbon & BBQ,” while tequila enthusiasts celebrate with Espolon Tequila at Gypsy Bar for “Margarita Madness,” and beer buffs enjoy a tasting of Beach Haus Brewery at 28 West for “Beer N’ Bites.” Advanced and amateur oenophiles are invited to join Master Sommelier Robert Bigelow for “Wine Tasting 101” at The Water Club, while champagne lovers spend the afternoon enjoying an escalating flight of bubbles and light nibbles at “Bubbles…by Veuve Clicquot” inside Tesoro Lounge.

– Strain into highball glass filled with ice.

– Top with heavy whipping cream.

– Enjoy!

The Borgata Poker Room Does October Right

September may have belonged to the 2014 Borgata Poker Open, but there’s always something going on in the Borgata Poker Room and October is shaping up to be a monster month in its own right.

We got poker promotions. We got special tournaments. We got the Borgata Buffet (it’ll make sense in a minute).

In short, we’ve got the best poker action in Atlantic City this October.

The month starts with October Bonus Comp Dollars in effect for the entire month. October 1-31, play 60 hours in the poker room throughout the month and earn $50 in Bonus Comp Dollars. Play 90 hours and earn $75 of Bonus Comp Dollars.

Comp Dollars are good for food, drinks and entertainment. Check out the list of eligible games here.

This October also sees Borgata’s High Hand Challenge on Mondays and Thursdays all month long.

Here’s how it works:

The promotion will begin at noon and conclude at 10:00pm, or when a total of $2,000 has been awarded; whichever occurs first. Full house or better required for the initial High Hand. Initial and subsequent high hands that remain unbeaten for 60 minutes will receive $250. Initial and subsequent high hands that are beaten within 60 minutes will receive $50.

In other words, get a full house or higher and if it holds up for an hour as the highest hand in the room you get $250. Here’s the full rundown.

The poker room has also extended our Splash the Pot Promotion through October. Every Tuesday through October, one qualifying table will be selected every 30 minutes to receive $100 for the pot from noon to 9:30pm. A total of $2,000 will be awarded each Tuesday to 20 randomly selected tables.

Plus, we’ve extended our monthly Exclusive Tournament Offer through October. For every five Borgata Poker tournaments you enter, from October 1-31, 2014 receive a complimentary Borgata Buffet. Eligible tournaments include Daily Tournaments, Deep Stacks Challenge, Mini Series, Sunday Specialty Tournaments and the Halloween Tournament in October.

Speaking of tournaments, Sundays in October we’re adding a special tournament each week to the Borgata Poker Room daily schedule.

They are:

The Borgata Poker Room is also holding a Deep Stacks Challenge from October 13 to October 18. That’s one special Deep Stacks tournament each day with prize pool guarantees of $15,000 to $40,000. The October 18 tournament is a $40,000 guaranteed, $35 + $50 NLH tournament with a starting stack of 40,000 in chips.

Borgata will hold its ever-popular Saturday Series tournament on October 25. This $100,000 guaranteed $350 + $50 tournament is held in months without a seasonal Borgata Open and is a poker room fave.

It’s followed, as usual, on October 27 to October 31 with the Borgata $100,000 Guaranteed Mini-series. The $150 + $30 tournament offers four opening sessions from October 27 to October 30 before finishing up on Halloween.

But that’s not it on Halloween. We’re also presenting a special Halloween Tournament on October 31. It’s another $150 + $30 Deeper Stack tournament starting at noon.

Like we said, September was good at the Borgata Poker Room, but October is a monster month.
