Borgata Online Winners for July 6 – July 12

Sometimes, when perusing the big online winners each week at BorgataCasino.com and BorgataPoker.com, you may think the really big jackpots only come to players who take big risks.

In other words, those that make big bets.

But a lot of online players like to make smaller wagers as they try out the various games and tournaments available at BorgataCasino.com and BorgataPoker.com. And they hit jackpots too. Lots of them.

And this week, they hit some pretty big ones. Like say three jackpots of better than $3,400 on bets less than $10, including a $2 bet that netted a jackpot of just under $4,000.

Summer calls for evenings under an open sky, and what better way to celebrate than with a dinner party at home with your closest friends? Follow our guide for a seamless summer get together with dinner menus and recipes by two of our favorite chefs, Wolfgang Puck and Bobby Flay.

Summer Dinner Party

  • Set up tables in different areas of your outdoor entertaining space. Drinks in one spot and appetizers in another. This will encourage guests to take full advantage of the yard before sitting down for dinner.
  • Speaking of apps… prepare simple make-ahead starters like Watermelon with Feta, Mint Leaves, and Balsamic Glaze; Fresh Jersey Tomatoes with Basil, Buffalo Mozzarella, Extra Virgin Olive Oil and Sea Salt; Wolfgang Puck’s Edamame Guacamole; and Bobby Flay’s Shrimp with Tomatillo-Horseradish.
  • Once you decide on your menu, read through each recipe and prep as much as you can in advance of your party so you can spend more time entertaining than cooking.
  • Create a fiery glow with string lights, battery-operated candles, and floating candles. Use a fire pit to enjoy s’mores after dinner.
  • Fashion centerpieces using fresh flowers or produce from your garden or local market.
  • Make a playlist of your favorite summer jams, adding enough songs to carry you through the end of the party.
  • Encourage guests to socialize with yard games like horseshoes, cornhole, or croquet.

In-Season Now: Jersey Tomato

When it comes to tomatoes, New Jersey has bragging rights. Picked at the peak of ripeness, a good Jersey tomato requires minimal preparation before devouring its plump, juicy flesh. Wolfgang Puck American Grille’s Executive Chef, Aram Mardigian, celebrates the legendary flavor with three simple recipes you’re sure to love as much as we do – including Hand-rolled Garganelli Pasta with Oven-Dried Tomatoes, Garlic, & Basil; Grilled Jersey Tomato Soup; and Halibut with Confit Tomatoes & Summer Zucchini Puree.


Hand-rolled Garganelli Pasta with Oven-Dried Tomatoes, Garlic, & BasilGarganelli Pasta with Oven-Dried Tomatoes, Garlic, & Basil

“Fresh summer pasta is a staple in my home. It’s so easy!”

  • For the Oven-Dried Tomatoes
    • Ingredients:
      • 12 each Roma tomatoes scooped out
      • 1 cup olive oil
      • 2 each garlic cloves sliced thin
      • 1 bunch fresh thyme
      • Salt and black pepper to taste
    • Directions:
      • Toss tomatoes in olive oil and season well with salt and black pepper.
      • Place on a sheet pan with a rack scooped side up.
      • In each cavity, place a thin slice of garlic and a sprig of thyme.
      • Bake in the oven at 200 degrees F for about 4 hours.
      • Remove from the oven and let cool at room temperature.
      • Peel skin and reserve.
  • To prepare the garganelli pasta:
    • Directions:
      • Start with a thin sheet of fresh pasta dough.
      • Cut the pasta sheet into 2″ by 2″ squares.
      • Roll each square over a gnocchi board with a wooden dowel from corner to corner and cinch at the end by putting some light pressure at the tip of the corner. This will form a tubular pasta shape. The garganelli should have a similar shape to penne.
  • To prepare the dish:
    • Ingredients:
      • 6 oven-dried tomato halves
      • 12 pieces fresh garganelli pasta
      • Whole basil leaves – desired amount
      • 2 tbsp cooking oil
      • 3 garlic cloves
      • Parmesan Reggiano – desired amount
      • Salt and fresh black pepper to taste
    • Directions:
      • In a fry pan, roast your garlic cloves.
      • Take the pan off of the heat and let cool down a little.
      • Add the oven-dried tomatoes and basil leaves away from the heat.
      • Cook the garganelli in salted boiling water for 30 seconds.
      • Add the pasta to the pan.
      • Lightly season and toss everything together to distribute the flavors.
      • Place on a plate and top with fresh Parmesan Reggiano. Add some dry chili flakes if you like it spicy!

 

Grilled Jersey Tomato Soup

• Grilled Jersey Tomato Soup

“I prefer this soup to be served hot with a gooey grilled cheese sandwich and a crunchy side salad, but it also works really well as a cold soup or fresh pasta sauce.”

  • Ingredients:
    • 20 each Roma tomatoes
    • 1 cup garlic cloves (crushed)
    • 2 each large white onions
    • 2 cups whole basil leaves
    • 1 cup olive oil
    • Salt and black pepper to taste
    • Water as needed
  • Directions:
    • Toss tomatoes in olive oil and season well with salt and pepper.
    • Grill tomatoes over medium heat (charcoal gives best flavor.)
    • Set tomatoes aside.
    • In a sauce pot, slowly cook garlic and onions in olive oil until transparent.
    • Add tomatoes and let cook slowly for 30 minutes.
    • In batches, blend with olive oil, salt, and black pepper.

 

Halibut with Confit Tomatoes & Summer Zucchini Puree

•	Halibut with Confit Tomatoes & Summer Zucchini Puree

“This dish represents all that summer means to me!”

  • For the Confit Tomatoes
    • Ingredients:
      • 1 pint cherry tomatoes
      • 2 cups olive oil
      • 2 each garlic cloves
      • 1 bunch fresh mint
      • 1 bunch fresh basil
      • 1 bunch fresh parsley
      • Sugar as needed
    • Directions:
      • Fry tomatoes in hot oil until the skin cracks and starts to come off.
      • Remove from the hot oil and let stand at room temperature.
      • When the tomatoes are cool enough to handle, remove the skins.
      • Let the oil cool.
      • Place whole herbs in a cool fry pan, and place tomatoes on top.
      • Pour the cool oil over the tomatoes to cover. Add more oil to completely cover the tomatoes if needed.
      • Put on stove and cook on a very, very low flame.
      • When the tomatoes are soft to the touch they are done.
      • Store in the oil.
  • For the Summer Zucchini Puree
    • Ingredients:
      • 6 each zucchini diced, no seeds
      • 1 cup olive oil
      • 6 each garlic cloves
      • 1 bunch fresh mint
      • 1 bunch fresh basil
      • 1 bunch fresh parsley
      • 6 each anchovies
      • Chili flakes to taste
      • Salt and black pepper to taste
    • Directions:
      • In a fry pan, sauté the garlic in olive oil until it starts to brown.
      • Add zucchini and caramelize quickly. Do not overcook.
      • Add the herbs and wilt them a little with the still hot zucchini.
      • Add the anchovy and chili flakes. Season well.
      • Blend in a food processor until smooth. Check seasoning.
      • *You should do this in batch and not all at once as to not overcrowd the fry pan.
  • To prepare the halibut…
    • Directions:
      • Season the halibut filet with kosher salt and black pepper.
      • Heat a fry pan with vegetable oil. You may use alternative oils as long as the smoke at a high heat – not olive oil.
      • When the oil begins to smoke, carefully place the halibut filet in the pan and let brown on the bottom.
      • Carefully turn the halibut and brown on the opposite side.
      • Cook the halibut in a 450 degree F oven for about 5 minutes or to the doneness of your liking.
  • To prepare the dish…
    • Directions:
      • Heat the zucchini puree and place on the plate.
      • Place the cooked halibut filet over the zucchini puree.
      • Arrange confit tomatoes randomly.
      • Garnish with fresh basil.

VintageThe heat of the summer months requires a different list of go-to wines. Our focus shifts from hibernating indoors by the fire to lounging in the sunshine by the water. Borgata’s Wine Manager, Laura Turenne, shares her favorite wines to enjoy throughout the summer months.

By the sea…

Summer weather requires something light, fresh, and flavorful. Massaya Rose 2014 ($19│Vintage Wine Boutique) is a clean, delicate rendering of Cinsault and Syrah that lets you enjoy the raspberries and strawberries found in heavier red wines, but in that light white wine style that will keep you cool in hot weather. And what could be better with seafood than grapes grown on an island in the Aegean Sea? Domaine Sigalas’ vineyards of Assyrtiko 2012 on Santorini, Greece ($27│Vintage Wine Boutique) produce a dry white wine that has just the right balance of subtle citrus and minerality to make fish and white meats sing.

Francis Ford Coppola’s Director’s Cut Zinfandel 2012 ($30│Vintage Wine Boutique) is a classic pairing that will stand up to hearty ribs grilled in your favorite sweet and spicy barbecue sauce, but you could also opt for a softer Roger Perrin Cuvee Vieilles Vignes Cotes du Rhone 2012 ($24│Vintage Wine Boutique). Bright, juicy reds like Catena Malbec 2012 ($28│Vintage Wine Boutique) complement a burger’s beefiness and any veggies you choose to pile on top, while a light, crisp Robert Eymael Mönchhof 2012 Riesling ($18│Vintage Wine Boutique) counterbalances the char flavor on grilled items like chicken.

Miguel at Borgata Music Box August 8

You have to love it when serendipity kicks in and the timing is right here at Borgata Hotel Casino & Spa.

MiguelGrammy award winning singer Miguel Pimentel comes to Borgata’s Music Box this August 8 playing with L.A. rock band Dorothy.  And that means Borgata will host one of his first concerts after his new album “Wildheart’ drops. The single “Coffee” is already out.

And it’s much anticipated album, coming off the success of 2012’s “Kaleidoscope Dreams”, which made the Los Angeles native a star and earned him a Grammy for the single “Adorn”. The album set off a slew of live performances on TV, including a pretty controversial one at the Billboard Music Awards in 2013 (Google it).

Throw in his hit duet with Mariah Carey of “Beautiful” and it finally made Miguel a star, but as he recently told Rollingstone.com, he wasn’t exactly and overnight success.

“It was just like pushing a boulder up and up and up a hill and then you finally get to the top,” he says.

Well, he’s at the top now and describes “Wildheart” as “an ode to love of self …  the ongoing infatuation with whatever you’re f—ing into.”

The album mixes rock, soul and post-Prince freakiness into stark, atmospheric territory.

“I do this s–t because I love it,” Miguel told Rolling Stone. “This time it was like I finally want to have an identity as a tastemaker, as someone who’s ahead of the curve, someone who’s intellectual, someone who’s striving to push the boundaries, someone who’s ever-growing and evolving, someone who’s open-minded.”

It’s a long way from where Miguel grew up in California, splitting time between the lower income housing areas of San Pedro and his grandmother’s house in middle class Inglewood following his parents’ divorce. But he says the experience helped him search for his own identity—an identity that now translates to his music.

“I was just trying to figure out where I belong or who I am, which directly affects how I create my music and why I create the way I do,” he says. “I’m rooted in soul, but I’m in love with rock & roll and I’m not going to conform to any of their expectations because I do what the f–k I want, you know? There’s no box for me. There was never any box for me.”

“Nothing great ever happened because the person was antiquated or was completely by the book,” he says. “They had to be a little delusional, a little wild. They had to dream a little.”

For Miguel Pimentel, the dream has come true.

Also appearing is L.A. based rock band Dorothy which dropped a self-titled EP in September featuring the single “Wicked Ones.”

George Lopez at Borgata Event Center July 11

George LopezAt this point, you have to give comedian George Lopez his due as a pioneer.

Lopez—who brings his stand-up act to Borgata Hotel Casino & Spa in the Event Center July 11—was the first Mexican American to headline a TV show (two actually) and the first Latino host of a late-night talk show.

Lopez is best known for his six-season run on the TV show George Lopez, which is still a hit in syndication. He also spent two years as the host of Lopez Tonight on TBS. He’s produced and acted in the movie Spare Parts and appeared in several others and is the author of “I’m Not Gonna Lie and Other Lies You Tell When You Turn 50.”

If it sounds like we’re rattling off his resume, well, … it’s a pretty impressive resume. As Lopez often says, not bad for a poor kid from Los Angeles.

Of course, for Lopez it all started with stand-up more than 30 years ago—he returned to it a few years ago—which eventually brought him success.

“It means a lot in that I always felt invisible, and I was louder in my own head than I was verbally, … I was torturing myself, wanting to say things and not knowing how to be.” Lopez says. “The stand-up was a way out but it never came easy. So to have something that’s named after me make it, and that has history tied to Desi and Freddie and now Freddie Jr., it’s unbelievable to me because I never really thought anything good would happen to me.”

Still, success hasn’t softened Lopez—at least not on stage—and he still can bring it to a stand-up audience.

“I’ve been doing stand-up for a long time,” he says. “And it’s probably the freest I’ve ever been. On TV and with a talk show people are always telling you what to do and talk about, but on stage I can talk about what I want to.”

With George Lopez, you never know what’s coming next. He could voice a cartoon character, write a third bestseller, film another cable special or even launch another TV show.

On stage at Borgata, however, there’s one thing you do know. It’s gonna be funny.
