Borgata Online Winners for November 9 – 15

Every Sunday, BorgataPoker.com presents the Sunday $50K Guaranteed poker tournament in conjunction with our partners at PartyPoker. And with Borgata’s online casinos now two years old, the word has really gotten out about the Sunday $50K.

For the week of November 9 through 15, we awarded another better than $10K win for the tournament to PocketProfits (a very cool screen name) for $11,712. Thanksgiving Pies and Menus at Borgata

Ever wonder what the Pilgrims and the Native Americans ate at the first Thanksgiving dinner?

Did they have cranberry sauce that was perfectly shaped like a can? Did they put marshmallows in the yams? Oysters in the stuffing?

Well, no, but by all accounts it was a pretty good feast of turkey, waterfowl, venison, fish, lobster, clams, berries, fruit, pumpkin, and squash.

Of course turkey was the big popularity winner on that menu down through the years and even Alexander Hamilton—the guy on the $10 bill—proclaimed that “no citizen of the United States should refrain from turkey on Thanksgiving Day.”

We here at Borgata Hotel Casino & Spa love being part of the Thanksgiving dinner tradition and unlike many restaurants that close for the day, Borgata Dining is open and serving up turkey dinners at our fine dining restaurants.

And we don’t skimp on dessert either. We don’t know if the Pilgrims baked those fruits and berries into pies, but we do know that Borgata Executive Pastry Chef Thaddeus DuBois makes the best Thanksgiving pies.

If you prefer to leave the dinner to Borgata’s chefs, special Thanksgiving menus have been devised at Bobby Flay Steak, Fornelletto, Wolfgang Puck American Grille and Old Homestead Steakhouse.

Andy Grammer at Borgata’s Music Box November 28

The world is full of songs that are hard to get out of your head. Once you hear them, they stay with you all day, in the back of your mind, in the front of your mind, taking over your mind.

And for those who come to Borgata’s Music Box on November 28 to see singer and “Dancing With the Stars” star Andy Grammer, we guarantee you’ll know what we’re talking about.

Andy GrammerShortly after the concert, we envision a few thousand Grammer fans walking around Borgata Hotel Casino & Spa softly singing “Nah, nah, honey I’m good. I could have another but I probably should—Not.”

And maybe not all that softly. That’s what happens when a singer hits on a relationship anthem that touches the public’s heart, and has a great musical hook.

The success of the single took even Grammer by surprise, but not because of the subject matter.

“I think anyone in a relationship has to deal with temptation, if they’re being honest with themselves,” the married Grammer recently told radio.com. “People don’t talk about it very much but it’s very honest. Guys and girls both have temptation.

“With me being out on the road, after-shows, signing pictures, hanging out, doing meet-and-greets and stuff, that’s definitely real.” He says. “There are pretty girls all over the place. But there are still a lot of people standing strong, doing their thing in loving relationships actually staying true. I wanted to write an honest love song from that point of view. There wasn’t one specific girl I’m thinking of when I sing that song, it’s an overall idea.”

Of course the song also may be one of the best sing-along songs in a few years. Probably because it’s so – peppy.

“When you try to write songs like this, they’re really hard to get right. I can get cheesy so fast,” Grammer says. “Every once in a while when you can get one through but still have this feeling and this message–like a Pharrell “Happy.” It gets through and everyone is like, “Oh yeah, I want to be happy! I love being happy!” But usually when you talk about that topic it sounds really, really cheesy. When one gets through and doesn’t feel that way, people rally around.”

Of course Grammer also has the hits “Keep Your Head Up” and “Fine by Me” and has been going on a tear since arriving on the music scene with his first album in 2011. He’s also been a much rooted for contestant on “Dancing with the Stars,” not bad for a kid who started as a street performer in Santa Monica.

And it’s that experience as a street performer that he points to as giving him the strength to succeed in music.

“A normal Saturday is you get there at 8 A.M. and leave at 10 P.M. But the amount of time that people actually give a s–t to what you’re doing is very little, he tells Glamour.com. “You’re out there literally screaming to the world, and there’s crickets sometimes. You have to figure out how to stay up and not jump off a bridge. One day as I was walking back to my car, I looked up at the sky and said, “Your move. Because I’m literally doing everything I can do. I’m pretty sure this is what I’m supposed to do.” I didn’t have anything in my bank account, and I was pushing as hard as I could. I remember I went home that night and wrote “Keep Your Head Up.”

So get ready to sing-a-long with Grammer at Borgata’s Music Box. Everyone else will be.

If you’d prefer to skip the work, but still delight in a delicious holiday meal, join any of Borgata’s participating restaurants for a Thanksgiving worth savoring – including Bobby Flay Steak, Old Homestead Steak House, Fornelletto Cucina & Wine Bar, Wolfgang Puck American Grille, The Metropolitan, and Borgata Buffet.

Grilled Turkey│Recipe via BobbyFlay.com

  • Ingredients:
    • 1 12-14 lb turkey
    • 2 ½ tbsp kosher salt
    • 1 tsp freshly ground black pepper
    • ½ cup white wine
    • 4 tbsp unsalted butter, melted
    • 4 tbsp olive oil
    • 2 tbsp finely chopped rosemary, sage, or thyme
    • Wood chips, soaked (optional)
  • Directions:
    • Remove the turkey from the refrigerator at least an hour before grilling so it can come to room temperature. Place the bird on a rimmed baking sheet or large cutting board. Using a sturdy pair of kitchen shears, snip along both sides of the backbone to remove it entirely. (Save the bone for making stock for your gravy.) Snip through the top 1-2 inches of the breastbone to make flattening the turkey easier. Turn the turkey over (breast-side up) and push firmly down to split the breastbone. Tuck the wings behind the breast. This technique is called spatchcocking, and now the turkey should flat. Using paper towels, blot any remaining moisture. Season the turkey on both sides liberally with salt and pepper.
    • Stir with wine, butter, oil, and herbs together and set aside for basting.
    • Wrap a metal sheet pan or shallow metal roasting dish in aluminum foil to deflect some of the heat from the breast and to catch the drippings. Place the pan underneath the grill grates and heat the grill to medium-low heat (about 325-375 desgrees F.) If using charcoal, add a few pieces of soaked hardwood for additional flavor, or wrap the soaked wood in aluminum foil and place next to the turkey. Brush the grates clean. Place the turkey in the middle of the grille over the pan, breast-side up.
  • Cover the turkey and grill, basting every 20 mins, over medium-low indirect heat for 1 hour and 45 mins, or until the thickest part of the breast is 160 degrees F. Remove the turkey to a rimmed baking dish and allow to rest for 30 mins before carving. Add any accumulated juices and pan dripping to your gravy. Carve and serve.

Wild Mushroom Stuffing│Recipe via WolfgangPuck.com

  • Ingredients:
    • ¼ lb chicken liver
    • ½ oz dried porcini mushrooms
    • 2 loaves dried bread, crusts removed and cubed
    • 2 tbsp extra virgin olive oil
    • 2 medium onions, chopped
    • Pancetta
    • 4 stalks organic celery and leaves, chopped
    • 3 cups sliced organic mushrooms
    • 1 cup chicken stock
    • 3 cage-free eggs, lightly beaten
    • 1 tbsp chopped parsley
    • 1 tbsp chopped sage
    • 1 tbsp chopped rosemary
    • Salt and pepper to taste
  • Directions:
    • Render chicken liver in sauté pan. Remove and pour rendered fat over bread. Dice and reserve. If you use chicken liver, add 4 tablespoons of butter.
    • Rinse dried porcini and soak in warm water. Drain and chop mushrooms, reserving liquid.
    • Heat olive oil in sauté pan over medium heat and add onions, celery, and pancetta. Cook until vegetables become translucent. Combine dried mushrooms to fresh mushrooms and add reserved mushroom liquid and stock. Cook over medium heat and reduce until almost dry. Cook and set aside.
  • Place chicken liver and dried bread cubes in a large bowl. Add herbs, beaten eggs, and cooled mushroom mixture. Mix until all ingredients are incorporated. Fill legs of turkey according to recipe (or place stuffing in a buttered gratin dish and bake in pre-heated 300 degrees F oven for 30 minutes.

Crispy Brussels Sprouts│Recipe by Michael Schulson

  • Ingredients:
    • ¾ cup fish sauce
    • 1 cup water
    • ½ cup sherry vinegar
    • ¼ cup blended oil
    • ½ cup cumin
    • 1/8 cup fresh ginger, finely chopped
    • 1/8 cup garli, finely chopped
    • 1/8 cup red chilis, finely chopped
    • 2 cups Brussels sprouts quartered
  • Directions:
    • Chop ginger, garlic, chilis very fine.
    • Combine all ingredients except Brussels sprouts together and blend with immersion blender.
    • Deep fry Brussels sprouts until crispy and browned.
  • Toss sprouts in a bowl with ¼ cup sauce or desired amount.

Pumpkin Cheesecake with Graham Cracker Crust│Recipe by Stephen Kalt *Available Thanksgiving Day at Fornelletto Cucina & Wine Bar

  • Ingredients:
    • 5 lb cream cheese
    • 7 oz granulated sugar
    • 7 oz crème Fraiche
    • 2 whole eggs
    • 2 egg yolks
    • 1 .3 oz lemon juice
    • .75 oz vanilla extract
    • 6 oz Libby’s pumpkin puree
    • 6 oz light brown sugar
    • 2 tsp cinnamon
    • ½ tsp ginger
    • ¼ tsp clobes
    • 7 oz cheese cake batter
    • For the graham cracker crust:
      • Ingredients: 4 packages of graham crackers, 5.3 oz sugar, 8 oz melted butter, and a pinch of salt.
      • Directions: Grind all ingredients in a food processor and slowly drizzle in melted butter.
  • Directions:
    • Cream sugar and cream cheese together
    • Add crème Fraiche, eggs, lemon, and spices
    • In a separate bowl, combine pumpkin, sugar, spices, and cheese cake batter
    • Cover bottom of individual baking cups with graham cracker mix
    • Fill each cup ¾ of the way with batter
    • Add one tablespoon of pumpkin mix to the center of the cup – suspend pumpkin mixture in the batter
