For those who were looking for a good, healthy time, Savor Borgata didn’t fail. A Saturday afternoon luncheon and workshop featuring Greens and Grains (with locations in Galloway, Northfield, and Ventnor) provided guests with an opportunity to try some delectable, good-for-you dishes paired with freshly-pressed juices.
Guests were welcomed into The Metropolitan for an afternoon of healthy eats by Borgata Executive Chef Tom Biglan and interesting tid-bids from the staff of Green and Grains. The menu featured a Six Mushroom and Root Vegetable Chowder with Herbed Creme Fraiche, Warm Spinach and Kale Salad with a Beet Root and Lentil Cake (complete with blueberries and a pomegranate vinaigrette), and a Salmon and Chia Seed Crusted Stack with gluten-free bread, oven-dried organic heirloom tomatoes, horseradish and avocado cream, garlic and onion straws, and baby amaranth leaves. Chefs also prepared chocolate-covered seasonal fruit as a sweet way to finish the luncheon.
The folks from Green and Grains provided liquid freshment via their signature juices. For the lunch, they brought along “Restore” (kale, cucumber, celery, ginger, parsley, and lemon), “Recharge” (beet, carrot, apple, ginger, and lemon), and “Reboot” (apple, lemon, ginger, and cayenne).
