November is the month when turkey takes the center stage in American cuisine. Not only do we have Thanksgiving – affectionately called Turkey Day – we also have a few weeks of turkey recipes to use up the leftovers that follow. And for many families, we do it all again for Christmas and New Year’s meals.
All of this comes about because of the pilgrim’s story and the first Thanksgiving meal. Since most people don’t serve a lot of deer and wild pheasant at their tables, turkey was almost universally adopted as the symbolic holiday meal.
And that’s been just fine with Americans, since, as a country, we love turkey. Americans will eat about 46 million turkeys this Thanksgiving. They also eat 22 million turkeys at Christmas, and even serve up 19 million on Easter.
And why not? Turkey is low in fat and is a source of iron, zinc, potassium and phosphorus. It is also a source of vitamin B6 and niacin, which are both essential for the body’s energy production and regular turkey consumption can help lower cholesterol levels.
