Online Gaming Winners for November 5-11

PHOTOS: The Ultimate Food Experience at Savor Borgata

Savor Borgata celebrated 10 years in 2017, and The Ultimate Food Experience at the Event Center was the ideal anniversary party for such a beloved event.  Dozens of specially-created food trucks and culinary stations served over 1,000 guests throughout the evening, featuring everything from sushi hand rolls to apple pound cake and everything in-between.  In addition to the amazing food and drink, there was plenty of live music, a Cirque-inspired silks routine, fortune tellers, portrait artists, and more, not to mention Borgata’s entire roster of celebrity chefs were in the house. Take a look at the colorful and delicious fun that capped off a wonderful weekend celebration of all things culinary at Borgata.

Geoffrey Zakarian Shares Culinary Tips at Borgata Demo

Iron Chef, and Lifestyle Consultant for Borgata’s Water Club, Geoffrey Zakarian lent his humor and signature style to Savor Borgata weekend during an interactive cooking demo at The Music Box. On the menu, the Chef made Chicken Paillard with salad and a Dark and Stormy cocktail, and even though he prepared the dishes step by step for the full house, he also took plenty of questions from the audience and revealed some helpful culinary tips.

For instance, he doesn’t believe in brining a turkey before a big Thanksgiving meal, and suggests putting a thermometer right in the thickest part of the bird’s thigh and waiting for the right temperature before pulling the turkey out of the oven.  For the rest of the big Thanksgiving meal, he provided a practical solution: make a very carefully curated guest list and have everyone bring their best dish.  That way you, as the host, aren’t stressed days ahead trying to prepare the entire meal.

Another smart suggestion from the Chef is to avoid having an open bar at all costs for special events, or even your own party.  It takes too long for folks to get what they really want: a drink.  Instead, he advises creating one signature cocktail in large batches, and offer one white wine, one red wine, and one beer.  This way there’s no one stuck playing bartender, and the guests get served quickly.

Some other interesting tips: the Chef encouraged home cooks to avoid using extra virgin olive oil because of its low smoke point, and told audience members to let meat or chicken “sit out” for an hour before cooking.  That way, the chill will be gone, and the meat or chicken will cook more evenly.  The hour-long demonstration showed just know knowledgable and entertaining Chef Zakarian is in front of a live audience, and inspired guests to get cooking.

What Was For Lunch With Bobby Flay?

Iron Chef and all-around superstar Bobby Flay was on hand at Borgata’s Bobby Flay Steak to present a special three-course lunch during Savor Borgata.  The seasonal menu featured some of Chef Flay’s unique seasonal dishes, paired with organic wines from Robert Stinksey Vineyards.

To begin, guests started with a Pumpkin and Mascarpone Caramelle pasta.  The dish was named after the caramels that come wrapped in twisted plastic. Similar to the candy, Chef Flay wrapped pumpkin, cremini mushrooms, and mascarpone cheese in pasta dough, and served it with brown butter and sage.  The pasta was paired with a 2013 Pinot Noir.

For the main course, Chef Flay served a Pork Tenderloin with tomato pan juices, gremolata, which the chef described as “red pesto,” and romesco polenta.  This was paired with a 2013 Bordeaux Blend.  Finally, for dessert, Chef Flay brought a treat from his New York based American brasserie, Bar Americain: the Bar Americain Apple Tart, served with cinnamon anglaise and nutmeg ice cream.  This was presented with a 2013 Late Harvest Pinot Gris.

Chef Flay told the group of diners that he enjoyed presenting this type of casual lunch compared to a culinary demonstration as he can mingle with his fans, which is exactly what he did.  Anyone who attended the event felt comfortable and attended to as they enjoyed a fantastic afternoon of deletable eats with the superstar chef.

Behind the Scenes of Borgata’s Kitchen with Chef Tom

Borgata’s Executive Chef Tom Biglan took inquisitive Savor Borgata guests for a behind-the-scenes look at what it takes to provide dinner service in Borgata’s professional kitchen. The goal?  Show how Borgata’s outstanding culinary team executes a flawlessly-timed meal.

Of course, what fun is it just to watch food being made without tasting it?  Chef Tom had that covered by providing a five-course tasting menu paired with wine.  Guests started with Avocado and Crab Toast served with crumbled bacon and cucumbers.  Then, they had the voice of a Roasted Asparagus Soup with poached lobster, Clams Casino, or Baked Pecorino with toasted semolina.

A salad course consisted of a voice between an Italian Market Salad with salami, prosciutto, grilled zucchini, and shared radishes, an Arugula Salad with smoked pears, or a classic Caesar Salad.  For the main course, there was Breast of Pheasant with wild mushrooms, House-Smoked Pan Roasted Salmon with a black pepper and avocado cream, or Petite Filet Mignon with White Whisky Hollandaise.  A sweet finish left guests with a taste of either a Warm Roasted Apple and Pear Cobbler, a Gingerbread Ice Cream Sandwich, or a Milk Chocolate-Lemon Curd Parfait.

Making Cavatelli With Michael Symon at Angeline

Guests at Savor Borgata experienced firsthand why Michael Symon might not mind being called a Mama’s Boy.  An interactive seminar, “Cavatelli Making 101” at Angeline restaurant, payed homage to his mother, Angel, who The Iron Chef and The Chew co-host named his Borgata establishment after.  Guests were treated to a behind-the-scenes look at how to make one of Chef Symon’s signature pastas, cavatelli, and learned some culinary tricks along the way.

Several long tables with pre-measured ingredients and an assortment of kitchen tools served as an interactive classroom for Savor guests to cook alongside Chef Symon.  He shared some of his “tricks of the trade” for any type of cooking, many of which where inspired by the kitchens of his mother and grandmother. Symon explained that his grandmother cooked whatever was fresh in her yard, and emphasized the importance of using a seasonal methodology when designing dishes.  For example, it isn’t quite natural to have tomatoes in New Jersey growing outdoors in the middle of winter, so only use them when they are seasonally available.  In sort, eat seasonally and respect the environment.

With that in mind, the Chef emphasized learning techniques, not recipes.  With learning a single recipe, you only have that specific recipe in your culinary arsenal, whereas if you learn a technique that can be adapted, you have a bevy of recipes that you can adjust as needed with the changing seasons.

Chef Symon also made clear that quality ingredients are critical when cooking.  If you have a bad steak, even if an Iron Chef prepares it, it’ll be mediocre at best.  However, if you start with a good steak, even a novice home cook will most likely be able to produce a nice meal.

The participants of the seminar eagerly soaked up the practical knowledge and advice of Chef Symon, all while preparing the Chef’s canatelli recipe and enjoying a lunch of Angeline favorites.  It was an insightful afternoon of culinary secrets and great food.
