Breakfast @ Borgata: Borgata Buffet

Borgata’s award-winning decadent buffet has options to match any appetite, and features an incredible spread for breakfast to ensure we satisfy your early-morning cravings. In fact, Borgata Buffet is the only buffet in Atlantic City to offer breakfast items, making it a destination-worthy morning dining establishment.  It also has the most breakfast options in the city!

The buffet is curated by Borgata’s Executive Chef, Thomas Biglan. As Executive Chef of Borgata, Chef Biglan oversees dining destinations that are among the most sought after in Atlantic City – including the Borgata Buffet. Biglan also directs the teams responsible for kitchen prep and production, banquets, catering and special events, in addition to the in-room dining programs for both the AAA Four-Diamond Borgata and Water Club hotels.

Guests who visit the Borgata Buffet for breakfast will be welcomed to a rotating menu that explores fresh, seasonal ingredients. For a savory start, try the made-to-order omelet bar, hand-carved ham and bacon, eggs Benedict, and lox with all of the accompaniments. There’s also plenty of classics, like old fashioned pancakes and waffles, fresh baked pastries, and fresh fruit. Coffee, tea, and other hot and cold beverages are available.

There’s also a special Sunday Brunch, which includes all of the items above, but also features additional delectable eats, like a prime rib carving station, sirloin steaks, shrimp cocktail, and more!

Breakfast is $17.95 per person and is all you care to eat. The Borgata Buffet is open for breakfast Mondays, Thursdays, Fridays, and Saturdays from 8am – 11:15am. Brunch is $27.95 per person and is served Sundays from 8am-3pm.

RECIPE: Celebrate National Chocolate Cake Day with Bobby Flay Steak’s Chocolate Canella Cake

Calling all chocolate lovers: January 29 is National Chocolate Cake Day, which gives you a very good excuse to indulge in something sweet.  At Borgata’s Bobby Flay Steak, there’s a perfect celebration dessert: Bobby’s 13 layer Chocolate Canella Cake.  Lucky for you, our pastry chef team has provided us the recipe for this decadent treat that you can prepare at home!

Bobby Flay Steak’s 13-Layer Chocolate Canella Cake

For the Chocolate Devils food cake:

Coffee, 1 C. + 2 T.
Semi sweet chocolate, 2.25 oz.
Buttermilk, 1 C. + 2 T.
Canola Oil, ½ C. + 1 T.
Vanilla Extract, 2 t.
Eggs, 2
Egg Yolks, 1
Sugar, 465g
All-purpose Flour, 270g
Cocoa Powder, extra brute, 130g
Salt, 1 t.
Baking Soda, 1 ¼ t.
Baking Powder, ¾ t.

 

Whip eggs, yolks, and sugar until light and pale yellow. Pout hot coffee over chocolate to melt. Whisk all wet ingredients into coffee mix. Sift together the remaining dry ingredients. Alternating, add wet and dries into the pale yellow eggs, scraping the bowl in between. Bake in a 8 inch cake pan that has been sprayed, parchment paper, then sprayed again. 40-55 minutes at 325 until a toothpick comes out clean. Allow to cool, then slice into 7 layers.

Mexican Chocolate Filling:

Mexican Chocolate (Ibarra or abueltia), 1 Box
Heavy Cream, 1 qt.
Cinnamon Sticks, 5 ea.
Vanilla Beans, 1 ea.
Cocoa Powder, extra brute, 1 T.
Sugar, 100g
Milk Chocolate, 100g
Semi sweet chocolate, 50g
Salt, ¾ t.
Instant Coffee, ¾ t.
Cayenne Pepper, ground, ¼ t.

Heat Mexican chocolate, cinnamon sticks, vanilla bean, cocoa powder, and sugar on low in a sauce pan. Stir frequently. Place all other ingredients in a bowl. When mix comes to a boil, pour over chocolates and spices. Whisk together then strain. Allow mix to set in the refrigerator overnight to set up. Whip in mixer until fluffy.

Layer cake and filling, soak cake layers with simple syrup and chocolate liqueur. Let sit in refrigerator for at least 8 hours.

Chocolate Glaze:

Heavy Cream, 1 C.
Bittersweet chocolate, 8 oz.
Crème fraiche (or sour cream), 1 C.

Heat heavy cream. Pour over chocolate, whisk together. Whisk in crème fraiche. Place over a double boiler to get to the right consistency. Pour over cake and allow to set in refrigerator.

Tom’s Tips: Sports Betting Tips for The Big Football Game

Interested in sports betting but not certain of how to begin? Get some tips from Tom Gable, Borgata’s Director of Race & Sports. In this edition, Tom explores the ins and outs of how to bet on the biggest game of the year!

The teams vying for the title are set and will feature a highly anticipated match-up between the Kansas City Chiefs and the San Francisco 49ers.  This is the biggest single game betting opportunity of the year and a lot of casual bettors jump into the pool, looking to make some money on the game that the whole world watches. Borgata opened the betting with the Chiefs as 1 ½ point favorites in the game and a total of 52 ½ .

In January’s tips, we reviewed the basic types of bets you can make on football like the point spread and the over/under, so we will move on to one of the more interesting types of bets you can make: prop bets.  The Super Bowl is the crown jewel event for prop betting.  A prop bet (short for proposition bet) is any sort of bet that is offered by a sportsbook aside from the basic types of wagers: point spread, total and money line.

The Super Bowl is famous for sportsbooks releasing pages and pages of available props to bet: everything from how many touchdowns are scored in the game, to who will win the opening coin toss, to how many passing yards Patrick Mahomes may throw for.  Borgata will be releasing a packet of prop bets available to make on the game, and some we get very creative with.  We will have player props, such as how many receiving yards George Kittle will have, and game prop bets, such as will there be a safety?  With most prop bets, you are simply betting on a yes or no (ie. Will a team have 3 straight scores?  Yes or No), or you, will be betting on an over/under (ie. Patrick Mahomes to pass for over or under 300 yards).

Borgata will have cross-sports parlay bets for the day of the game as well (ie, will James Harden score more points for the NBA’s Houston Rockets that day then Tyreek Hill will have receiving yards in the Super Bowl?).  Literally, from the coin toss on (will it be heads or tails), almost any play could determine a prop bet that has been offered.

Of course, Borgata will also be offering live betting throughout the game both in person at our sportsbooks or on the Borgata Sports app.  Good luck to everyone and enjoy the game!

Q&A: Borgata Celebrates 10 Years of Dark Fall Productions

On Sunday, February 16, Borgata will celebrate Dark Fall Productions’ 10th Anniversary. Frequent Borgata collaborators, cinematographers Alex DePhillipo and Andrew Gesler, will be joined by the band Pepper as they celebrate ten years since their filmmaking journey began with the debut of the award-winning “Dark Fall” surf documentary. A night of cinema and music will feature the premiere of Dark Fall’s new short film, music by Nomad, and beer and drink specials.  You can get tickets here.

We had a chance to chat with Alex and Andrew about their film making careers and what inspires them to capture the best moments on camera.

Alex DePhillipo

When did you first realize that you had passion and interest in making films and video?

Andrew – I grew up surfing and competing in Ocean City, NJ, as an amateur and eventually a professional. A big part of the sport is marketing via athlete endorsement and my career spanned the transition from a print and video (VHS) dominated platform to the content filled internet/social media world we live in today. As an athlete I spent a lot of time in-front of the lens, but I was always a part of the editing process. My involvement in post production, however, was mostly using video to analyze my skill, I basically became fluent in editing software accidentally. In 2008 Alex approached me to create a surf film that changed everything for me. He opened my eyes to the cinematic process and I see the world today much differently. While that project was very much his passion and vision, he included me in the creative and working with him on Dark Fall the movie changed my life forever.

Alex – My passion started early in high school. I grew up in Margate by the beach, which is usually a ghost town all year except for summer. My friends and I would film these Jackass-style surf/skate videos and that really sparked my interest to pursue professional filmmaking later on through the college arts.

Tell everyone a little bit about the documentary: what was your process in creating it?

Andrew – Dark Fall was a film about surfing in New Jersey and the adversity it takes to follow a dream in one of surfings more obscure locations. It was about our friends and it was a joy to create and share with the rest of the world. Alex and I spent endless days forecasting swell, getting the surfers to come together, interview to the zeitgeist of that time, and ultimately find that story and build a narration (which I gave), to bring the story together. Along the way we campaigned to raise budget and build press leading to a world premiere in Atlantic City that we’ll never forget.

Alex – Andrew said it best. Dark Fall is about the adversity of surfing here in NJ, and the people who dedicated their lives to it. The process was personally the most challenging thing I have ever done in my life. We really had no script as things kept evolving so we kept filming until we agreed that is was time to release. I think it took us a few years to make the film, which I shot about 95% of and edited alongside with Andrew. Our friend Robbie Beach helped tremendously in helping us polish it through post production.

Andrew Gesler

You are regular videographers at Borgata, capturing hundreds of events here. What have been some of your favorite to film?

Andrew – By far for me it is anything to do with Savor Borgata. My father attended culinary school and has worked in Food and Beverage in AC most of his life, so having the opportunity to film and work with the amazing Chef Partners on property has always been special for me as I get to appreciate an art I was raised to love as a boy. I’m a way better cook myself for it as well!

Alex – I love filming anything that has to do with food. Getting to work with celebrity chefs like Michael Symon and Bobby Flay has been unreal. It is really humbling we get to create branding content that showcases their restaurants. On the other side of the spectrum, filming a Steve Aoki nightlife show at Premier is a really good time too!

Tell us a bit about the new short film that you are premiering at Borgata on February 16.

Andrew – The new short film is an ode to the foundations we grew our business on, a thank you to the client/partners we work with today, and a thank you to the surfing communities that lifted us up when we released Dark Fall the movie 10 years ago.

Alex – The new film is some of our best surfing content shot in extreme cold conditions that we hope to turn into a series or a bigger project. It involves a bunch of the old crew from the original Dark Fall the film and a bunch of up and coming talent. We are excited to showcase it in Premier with that gigantic screen and amazing sound system. It should be quite a visual experience.

There’s a lot of people who are getting into film making, especially with all of the technology available on phones. What’s some advice that you would give them to get a great shot?

Andrew – See your vision and do everything you can to bring it to life. Just get started on it, write it down, shoot it, take in as much influence as you can everywhere, learn what you like and what you don’t like, re-write it, re-shoot it, Improve it. Never stop.

Alex – I would say to separate yourself from what everyone else is doing. Be different and never stop creating.

When you’re not filming at Borgata, what are some of your favorite things to do on property?

Andrew – I love to eat, so if there’s a live show, event, or something happening at the sports book, I’m quick to make the excuse to book a reservation at one of the restaurants and make a night of it!

Alex – From all the great restaurants to the spa and obviously a few adult beverages with some friends after a long week, there is really nothing Borgata doesn’t offer!

Borgata Players Celebrate Three Big Wins During the Weekend

It was a very happy new year for three lucky Borgata players who won huge jackpots during the weekend of January 11, 2020!
