Enjoy These Easy Pantry Recipes from Wolfgang Puck American Grille’s Chef Aram

March 27, 2020 by Ryan Ross Leave a Comment

Right now, many people are looking for unique and easy recipes that can be easily prepared from pantry staples. Aram Mardigian, Executive Restaurant Chef of Wolfgang Puck American Grille at Borgata, has two perfect ideas that can easily be whipped up in your own kitchen.  These two recipes bring a sense of comfort and can be made right at home with basic ingredients, for a taste of Borgata in your own home!

ARAM’S TOMATO PIE

Why it’s great from Chef Aram: “Everyone in South Jersey loves Tomato Pie, and what’s great is it’s easy to make!”

INGREDIENTS:

• 1 qt tomato sauce – you won’t need all of it
• 2 cups grated parmesan cheese
• dry oregano
For the dough:
• 1 cup water
• 1 teaspoon extra virgin olive oil
• 1 teaspoon salt
• 2 teaspoon sugar
• 3 cups all purpose flour
• 2 teaspoon yeast

DIRECTIONS:

• Mix ingredients for dough with dough hook or knead by hand for 12 minutes until dough is well formed. Rise 1 hour.
• Stretch and form into a greased sheet pan 18” by 13” ( or close to that).
• Apply a thin layer tomato sauce and some grated parmesan cheese and bake for 6 minutes at 425 degrees.
• Remove and add more tomato sauce and parmesan cheese. Bake until browned. Add a sprinkle of dry oregano to finish.

PORK SCHNITZEL (OR MILANESE)

WITH PICO DE GALLO

Tips from Chef Aram about this recipe: “Schnitzel is very easy to prepare using a basic breading.  You use boneless pork chops pounded thin, seasoned well with salt and pepper. Dredge pork with flour, then to egg wash, then to bread crumbs (I like the herbed ones). Deep fry using veggie or canola oil. Brown on both sides and they are done!”

For the pico de gallo:

Combine 3 large tomatoes, medium dice, 3 tablespoons diced red onion, 2 tablespoons small diced jalepeno (depending on how hot you like it), 2 tablespoons chopped cilantro, juice from 1 lemon, with salt and pepper to taste.

Borgata Donates 30,000 Meals to Local South Jersey Charities

March 19, 2020 by Bryan Buttler Leave a Comment

On Monday, March 16, Borgata Hotel Casino & Spa announced it would comply with New Jersey Governor Murphy’s order to temporarily suspend operations. While this is an unprecedented public health crisis, Borgata remains focused on what matters and is doing its part for the public good and for the good of our team members and communities. Since closing, Borgata has distributed more than 35,000 pounds of fresh food – an estimated 30,000 meals – to local charities including The Boys & Girls Club of Atlantic City and The Community Food Bank of New Jersey.

Total donated food by Borgata: 35,498 pounds (65 pallets), an estimated 30,000 meals

  • The Community Food Bank of New Jersey received: 31,922 pounds
  • Boys & Girls Club of Atlantic City received: 3,576 pounds

Boys & Girls Club of Atlantic City:

  • Over 1,000 families were served as a result of Borgata’s fresh food donations – including fruits, vegetables, breads, bagels, pastries, milk, juice, and salads.
  • In addition to the fresh food donations, Borgata prepared 250 sandwiches and 200 “grocery” bags of fresh fruit and vegetables for Boys & Girls Club employees to distribute to the community.
  • The Boys & Girls Club of Atlantic City’s mission is to provide resources for the development of young people, from all backgrounds – to realize their full potential as responsible and caring adults.
  • Last July, the Club unveiled the all-new MGM Resorts International Teen Center for Economic Youth Development & College Readiness thanks to a generous investment (2018) of $500,000 from MGM Resorts International, owner of Borgata Hotel Casino & Spa. Since opening this state-of-the-art 20,000 square foot Center, which includes a commercial teaching kitchen, the Center’s teens prepare 200 meals nightly for their member families. As a result, the Center proudly serves as a primary food resource for much of the Atlantic City community throughout the year.
  • More information on the Boys & Girls Club is available here: https://www.acbgc.org/
  • More information on how to donate to the Club is available here: https://www.acbgc.org/donate-today/

Community Food Bank of New Jersey:

  • The Community Food Bank of New Jersey’s Southern Branch partners with more than 250 local charities.
  • During this health crisis they have distributed fresh donated food from Borgata to the John Brooks Recovery Center, Spirit & Truth Worship Center, Salvation Army Atlantic City, Salvation Army Vineland, Salvation Army Bridgeton, and First United Methodist, among others.
  • The Food Bank serves as New Jersey’s largest anti-hunger and anti-poverty organization. Working together with volunteers, donors and their many partners, the Food Bank’s mission is to fill the emptiness caused by hunger with Food, Help, and Hope.

Stephanie Johnston, Customer Care Team Leader

What is the career highlight you are most proud of?  My proudest moment was moving quickly up the ranks to supervisor.  I was a stay-at-home mom for more than 15 years and very nervous about starting a new job.  I feel I’m thriving and now I’m going to school, too.

Where do you volunteer and how has it impacted you?  I’ve been a volunteer with the Scouts of America for the last 15 years.  It’s taught me patience, organization, and how to overcome my fears.  I’m doing things now I never thought I’d do.

If someone were to play you in a move, who would you want it to be?  I’d like Melissa McCarthy to play me in a movie.  I love how fun she seems, and I feel like she’d be able to capture my personality the best.

What’s something you want to do in the next year that you’ve never done before?  In the next year, I’m hoping to see the fruits of my labor by sending my daughter to college.  She’s been very diligent about her schoolwork and stays positive.  I can’t wait to see her start the next chapter in life.

Candice Hentz, Customer Care Representative

How do you feel you impact the people around you?  I think I impact people with generosity.  I think my giving nature is what people remember most about me.

Where do you volunteer and how has it impacted you?  I volunteer as often as I can with YAP Inc/Youth Advocacy and with Camden Youth Wrestling.  I have also volunteered for many years with several breast cancer organizations.  I also lend my crochet crafting for various charities whenever I am asked.  I was raised in a family with generations of missionaries who believe that you can tire in positive work but never get tired of giving.

What is the one piece of advice you received which has changed your life?  My grandmother said to me, “Run your own race.”  I live my life at my own speed with my needs, desires, and expectations.  I am so happy that I never gave anyone else the reigns to master how I live my life.

What is one thing about you that surprises others?  My love of motorcycles.  For some reason, people are surprised that I have loved motorcycles since I was a child, and that I love to ride.

Kira Hernandez, Specialized Services Manager

What is the career highlight you are most proud of?  A few years ago, Atlantic City hosted a city wide convention for Meeting Professionals International in effort to put our city on the map for large conventions.  Borgata had an opportunity to host a networking event for Choose Chicago in our Salon.  With the help and support of my colleagues, from the Salon and Banquets, we transformed the space to host cocktails and hors d’oeurves, while helping women meeting planners feel beautiful.

What is your definition of success?  Success is setting a goal, working hard, whether it be individually or as a team, overcoming obstacles, and completing what you set out to do.  Sometimes we een surprise ourselves and exceed our own expectations.

Where do you volunteer and how has it impacted you?  I spend time volunteering with the Linwood PTO.  I really like to see our community come together for our children in school.  Whether I help with book fair, field day, dances, or chaperoning field trips, I enjoy being present as children are making memories that will stay with them.

Who, or what, has been your biggest teacher?  Motherhood!

Cathy Michel, Senior Customer Assurance Specialist

What is the career highlight you are most proud of?  The career highlight I am most proud of is working hard and becoming a Senior Customer Assurance Specialist.

What is your favorite activity in your current position and how often do you get to do it?  My favorite activity is being able to turn a customer’s negative experience into a positive relationship.  I am able to achieve this on a daily basis.

Who is someone you really admire?  I admire my mother who is 97 years old and going strong.  She taught me to be kind to people and always do your best at everything you attempt at life.

Where do you volunteer and how has it impacted you?  I volunteer mainly at Borgata for any project that I can.  I think it’s important to help those who need it.

Deborah Stea, Group Dining and Events Manager

How do you feel you impact the people around you?  By inspiring and motivation the people around me by positive example.  I make a connection by engaging and interacting with shared knowledge, talents, and demonstrating compassion.

What is your definition of success? Simply put: to envision, plan, and prepare for goals or a goal and achieve it with integrity by being the person I aspire to be.  If I can achieve what I want and be happy and respected, that is success to me.

What is one thing about you that surprises others?  When I tell others that I am an amateur astronomer and an actively involved grandmother of a teenage grandson and a second younger grandson.

What qualities do you value in the people with whom you work?  Admirable work ethic, setting high standards, respect, caring, and supportiveness.

Where do you volunteer and how has it impacted you?  Habitat for Humanity has always been a favorite organization to volunteer time.  I’ve had several opportunities to work on builds with talented craftspeople who nurtured my own skills.  Affordable housing creates a stronger and more stable environment for families, which can make an impact on their future.

What qualities do you value in the people with whom you work?  Colleagues who care about their work, providing excellent service to our customers while respecting each other.  This is the description of our Hotel Sales Team!

Recognizing Borgata’s Female Team Members: Casino and Compliance

Karen Hober, Compliance Manager

What is the career highlight you are most proud of?  Being a part of opening Borgata was genuinely the best experience I ever had.  I worked with a lot of smart people and learned a great deal that I still use today.

What is your favorite activity in your current position and how often do you get to do it?  I love getting new projects that have not been done in the industry before and write internal controls.  It allows me to work with the departments and see their perspective and find out what their needs are.  Then we work together to come up with solutions that make the process more efficient and effective.

Where do you volunteer and how has it impacted you?  When my son was 8 years old, I wanted to teach him to give back.  I asked around the office for potential opportunities and Rosalie Lopez, Internet Gaming Compliance Manager, said she had been working with Shirley Mae’s Walk/Run for breast cancer for years.  She opened the door for me to contribute my time to this cause.  I will say the first time I saw the survivors walking down the staircase, it brought me to tears (and I don’t cry in public).  It was then that I knew I had to be a part of this annual event.

What qualities do you value in the people with whom you work?  I absolutely love when people know what they do and why they do it and can explain it.

Gloria “Cookie” Riley, Slot Assistant Shift Manager

What is the career highlight you are most proud of?  Succeeding 40 years in the casino world.

Where do you volunteer and how has it impacted you?  I contributed to the school supply drive, Bartenders for a Cause Basket Action, Borgata’s Holiday Food Drive, Saint Baldrick’s head shave, and the slot operations candy sale to raise money for the MGM Foundation.  I volunteered at the Borgata Baseball Blast, Borgata Cookie sale, and the Team Member Poker Tournament.  Contributing gives one a good feeling.

What qualities do you value in the people with whom you work?  The many different personalities, their work style, their process of thinking, and many of the outcomes.

How would your 10-year-old self react to what you do for a living?  Wow!

Congetta Marino, Slot Service Associate

What is the career highlight you are most proud of?  How good I am interacting with guests and how they always come back to see me!

Who is someone that you really admire?  I admire myself because I have overcome so much hardship and heartache in my life and I still strive to see the best in everything.

Who, or what, has been your biggest teacher?  Being a single mom.  By being a single parent, you learn how to be strong by not giving up and making the best of a bad situation.

If someone were to play you in a move, who would you want it to be?  Julia Roberts.

Karen Kosich, Casino Cage Department Trainer

What is your favorite activity in your current position and how often do you get to do it?  Sharing the things I learn with others is my favorite thing.  I love learning how what we do affects others, and vice versa, then explaining the “why” behind the process.  I tell everyone that knowledge is power.

How do you feel you impact the people around you?  I generally have a positive impact on people.  I greet everyone and find something nice or positive to say to them.

Who is someone that you really admire?  My daughter.  At 18, after high school, she chose to attend college in California.  After 4 years there, she moved to Pittsburgh for her master’s.  Then she moved to Santa Fe for her first “real” job.  She didn’t know anyone in any of those cities but was brave enough to make the move.

Where do you volunteer and how has it impacted you?  I’ve walked and ran in multiple 5K fundraisers.  Four times I participated in the Mother’s Day Susan G Komen 5K for breast cancer research.

Joan Hance, Table Games Floor Manager

How do you feel you impact the people around you?  Most of my associates respect me and like working with me.  I always try to let them know I have their backs and always try to listen to their needs and concerns.

What is the one piece of advice you received which has changed your life?  When you make a mistake, own it.  Mistakes are the pathway to success.

How would your 10-year old self react to what you do for a living?  Glamorous.

How many years have you been at Borgata?  Share a favorite memory.  I’ve been at Borgata for almost 17 years.  One night, a player that comes in all of the time with his wife who had Alzheimer’s came to me and said he lost her.  I called surveillance and with their help, we located her.  He was so happy and so was I.

Kunj Dangarwala, Casino Accounting Representative

How do you feel you impact the people around you?  I have lived my life always helping and encouraging people to be the best at what they do and I bring that mentality to work.  Whether it is a quick conversation or a small greeting, my goal is to leave the other person happy and motivated after the interaction.

What is one thing about you that surprise others?  Not many people know this, but I used to be very passionate about singing.  I won many awards in local competitions in India for religious and non-religious songs.

What qualities do you value in the people with whom you work?  I appreciate kind-hearted, friendly, cooperative individuals and opened who give back to others less fortunate.

What’s something you want to do in the next year that you’ve never done before?  Try to volunteer with the Red Cross.
