RECIPE: Homemade Bolognese Sauce

Our Borgata family has been busy in the kitchen, crafting all sorts of delicious meals like this simple and easy homemade Bolognese sauce!  Using pantry ingredients and produce available at your local supermarket, this sauce is the perfect accompaniment to pasta or meatballs.  Enjoy!

Bolognese Sauce

Ingredients:

  • 1 celery, chopped
  • 1 carrot, chopped
  • 2 garlic cloves, chopped
  • 1 large yellow onion, rough chopped
  • 1 small can tomato sauce
  • 1 can plum tomatoes
  • Half a tube of tomato paste
  • Palm of oregano
  • Pinch of red chili flakes
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1 pound plus ground beef or other ground meat

 

Heat pan to medium with olive oil. Add onions, carrots, and celery. Add garlic. Raise temperature to high and add meat, breaking it up using a spoon. Add pepper and plum tomatoes, breaking the tomatoes up with a spoon. Add tomato sauce. Then add oregano, chili flakes, salt and pepper. Reduce heat and simmer. Enjoy with your favorite pasta like tagliatelle. Garnish with Parmesan.

PHOTOS: Borgata Culinary Team Donates 150 Meals for Front Line Medical Workers

Borgata’s culinary team donated 150 meals for team members working the overnight shifts of Shore Medical Center in Somers Point on Wednesday, April 22 and the AtlantiCare Regional Medical Center in Atlantic City on Thursday, April 23. Borgata is grateful for the opportunity to honor our local health heroes; a small token of our appreciation for the area’s medical professionals, who are working to provide care around the clock.

Each meal was individually packaged in a Borgata food bag. Each bag included a sandwich/wrap, cup of tortellini salad, cup of fruit salad, homemade chocolate Bundt cake, energy bar, bag of chips, and nuts.

Previously, Borgata created nearly 100 chocolate Easter bunnies and baskets for The Boys & Girls Club of Atlantic City to distribute throughout the greater Atlantic City area.  Earlier in March, Borgata distributed more than 35,000 pounds of fresh food – an estimated 30,000 meals – to local charities including The Boys & Girls Club of Atlantic City and The Community FoodBank of New Jersey.

Cocktails with Anthony: Strawberry & Ginger Gimlet and Rum Manhattan

Wolfgang Puck American Grille’s General Manager, Anthony Santiago, is the mixologist responsible for creating many of the amazing cocktails on the restaurant’s menu.  He’s come up with some easy at-home recipes that will make you feel like you’re at Wolfgang Puck American Grille’s bar, enjoying a night out in Atlantic City.

STRAWBERRY & GINGER GIMLET: A delightful berry take on your favorite gin drink!

INGREDIENTS:

• 2 oz gin
• 1 oz lime juice
• 3 strawberries
• ¾ oz simply syrup
• 3 dashes ginger bitters or pinch of powdered ginger

DIRECTIONS

• Muddle simple syrup, lime juice, and strawberries together in the bottom of a shaker
• Add ginger and gin
• Shake with ice for 30 seconds
• Fine mesh strain over fresh ice into a hurricane or highball glass
• Garnish with a full strawberry

 

RUM MANHATTAN: A rum-forward version of the classic cocktail.

INGREDIENTS:

• 2 oz dark rum
• 1 oz sweet vermouth
• 2 dashes of bitters
• 1 teaspoon of raw sugar
• Lemon peel and/or dehydrated apple crisp for garnish

DIRECTIONS:

• Combine sugar and bitters in a mixing glass, then add spirits, and stir over ice for 30 seconds
• Double strain into a martini glass
• Garnish with a lemon peel and dehydrated apple crisp (optional)

Reduce Anxiety At Home With Borgata’s Spa Tips

There are many easy at-home methods to reduce anxiety and provide a spa-like experience which will bring relaxation and a sense of relief.  Aromatherapy, self-massage, and natural remedies are some simple ways to relax and enjoy your time at home. The team at Spa Toccare and Immersion Spa at Borgata have come up with several ways to bring calm and serenity to your at-home routines during this time of social distancing.

Exfoliate with an essential oil blend: Exfoliating the skin two to three times a week helps to remove dead skin cells and stimulate new cell growth. Select a scrub an essential oil blend that relieves tension, like eucalyptus or lavender. Follow with a deeply hydrating moisturizer to protect your new skin from getting dry.

Use cool cucumbers under eyes: Place cold cucumbers on your eyes, relax, and enjoy the refresh.  Cucumbers contain vitamin K.  Vitamin K re-hydrates tired skin and eliminates under eye bags  and dark circles.

Re-set with simple apple cider vinegar: Mix a teaspoon or two with honey and water and drink.  You’ll be well on your way to feeling energized and refreshed.

Easy headache relief with herbal ointment: Massage a little all-herbal ointment (like Tiger Balm) on the back of your neck and bit more on your temples and say sayonara, headache.  This simple aromatherapy self-massage is perfect for your time at home.

Yoga, Meditation, and Breathing: We carry stress in our bodies in different ways. Yoga, meditation and stretching can help calm your mind, body and spirit.  Specific stretching techniques, compressions and breathing exercises help create a sense of peace and calm.  Burn a relaxing candle while you practice.

Chef Partner Michael Schulson Shares Tips for Easy At-Home Robatayaki

Japanese barbecue, also known as robatayaki, is one of the signature dishes at Chef/Partner Michael Schulson’s Izakaya at Borgata.  If you’ve visited the restaurant before, you have undoubtedly heard the sounds of the giant open grills, where robatayaki is cooking for guests.  Making your own robatayki at home is easy, using basic pantry ingredients and store-bought items from your local grocery store.  Michael shares some of his favorite tips for at-home robatayaki in the video below.  Check out how simple it is to bring a taste of Izakaya home with you.

  • Use any assortment of protein that you wish: chicken, beef, or shrimp.
  • Make sure your protein is thinly sliced or cubed.  If your meat is thinly sliced, you won’t need to cook it very long.
  • Look for ingredients that are ready made at your supermarket, like kimchi.  There’s no reason to make that from scratch!
  • Brush easy sauces, like Michael’s yakatori sauce (or store-bought teriyaki sauce), on the meat.
  • Soak bamboo skewers in water so your robatayaki doesn’t burn.  Also, make sure that the top tip of the skewers are fully covered by the meat so it doesn’t burn.
  • Use a medium heat when you grill your robatayaki; make sure it is not too high. Spray your grill pan with non-stick spray before placing the skewers down.
  • There’s no need to add salt to your robatayaki, as your sauce probably has a lot of salt already.
  • If your meat is thinly sliced, you won’t need to cook it very long.
  • Use whatever herbs you have in the refrigerator and store-bought kimchi to garnish your finished dish.

RECIPE: Borgata’s Butter Cake At-Home

Professional bakery butter cake is as easy as incorporating several pantry staples at home.  Borgata’s Pastry Team prepared a simple butter cake recipe that you can make using boxed cake mix that you’ve been meaning to use or that you can readily purchase at supermarkets.  The secret is the special ingredients that are added to take this cake to the next level.

At-Home Butter Cake

Ingredients:

  • Favorite vanilla box cake mix
  • 4 ounces powdered sugar
  • 4 ounces cream cheese
  • 2 ounces melted butter
  • 1 large egg
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • Brown sugar (to top)

 

Recipe:

  • In one bowl, place the cream cheese and powdered sugar and warm in the microwave.  Be sure to mix every 30 seconds until it smooth.  Be careful not to overheat the mix.
  • When the cream cheese is smooth, add the melted butter milk, eggs, and vanilla and then mix together to form the batter.
  • Mix the box cake mix and pour it into a well-greased cake pan, filling the pan half way to the top.
  • Pour cream cheese batter over the cake batter, level the top, and sprinkle the top with a generous amount of brown sugar.
  • Bake the butter cake at 350 degrees until the center is done; test with a small knife.  When the knife pulls out clean, it is done.  Let cake cool at room temperature. Serve warm with your favorite ice cream.

This Easter, Borgata’s Pastry Team donated chocolate Easter bunnies to the local community.  Borgata created nearly 100 chocolate Easter bunnies and baskets for The Boys & Girls Club of Atlantic City to distribute throughout the greater Atlantic City area.  Earlier in March, Borgata distributed more than 35,000 pounds of fresh food – an estimated 30,000 meals – to local charities including The Boys & Girls Club of Atlantic City and The Community FoodBank of New Jersey.

Iron Chef Bobby Flay is here to share some trade secrets to cooking a perfect restaurant-quality steak at home.  Check out these easy tips on how Bobby adapts the techniques used at Bobby Flay Steak for an ideal steak that you can enjoy from your own kitchen.

  • At Bobby Flay Steak, they spice rub every single steak that they cook, and you can do the same. Combine paprika, cumin, chili powder, coriander, salt and pepper.   Rub it on the steak in one even layer. This will create a lot of flavor and a crust.
  • A cast iron pan is the best possible pan to use at home, but if you don’t have one, use something heavy that will hold the heat.
  • Use a light oil, like vegetable oil, so it has a higher smoking point.  Make sure to get the pan really hot.
  • Put the steak spice rub side down into the pan and add salt and pepper. Make sure you season heavily—that’s the difference between a restaurant steak and a at-home steak.
  • Don’t move steak in the pan a lot and don’t flip it often.  When you have to turn it, flip it only once.
  • While cooking, create a flavored butter to put on the steak: Chef Flay likes softened butter and BBQ sauce mixed together.
  • While steak is still hot in pan, put infused butter on top.  The butter will melt and drip into the steak juices and become a pan sauce.
  • Once done, let the steak rest for 5 minutes.

I’ll Take Suds With That Please

Make your own nourishing shower gel (or bubble bath) with this honey-filled recipe.

1/3 cup castile soap

1/3 cup honey

1/3 cup coconilla oil

Method

Mix ingredients together and wash away.

Benefits

The moisturizing oils combined with the anti-oxidant properties of honey will nourish and protect your skin.

All Eyes On You Eye Cream

This fresh eye cream will revive the skin under and around the eye area, keeping it moisturized and healthy.

3 slices of Avocado

5 drops of Almond oil

Method

Blend all the ingredients together into a smooth paste. Apply generously beneath the eye using the cushions of your ring finger. Starting at the inner corner of each eye, gently swipe the eye cream across the lower eye socket toward the temple making circular motions to nourish the fine lines.
